Nasi Goreng Jawa
Fried rice with a distinctly Javanese flavor — sweet, savory, richly spiced, and full of aroma from the ground spice paste sautéed to perfection.
Ingredients
Main Ingredients
- 3 plates of cold cooked white rice (ideally leftover from the day before)
- 2 chicken eggs
- 3 tbsp cooking oil
Filling
- 100 grams chicken (boiled and shredded)
- 5 beef meatballs (thinly sliced)
- 2 cabbage leaves (roughly sliced)
- 1 stalk scallion (sliced diagonally)
Spice Paste
- 5 shallots
- 3 cloves garlic
- 3 curly red chilies
- 2 candlenuts (toasted)
- 1/2 tsp roasted shrimp paste
- 1/2 tsp SANASALZ salt
Directions
- Prepare the RiceUse cold rice so the grains don't stick together when fried. Break up the rice with a fork so it doesn't clump when mixed with the seasoning.
- Scramble the EggsHeat 1 tbsp oil, add the eggs, and scramble until cooked. Push to the side of the pan.
- Sauté the Spice PasteAdd the remaining oil, then the spice paste. Sauté until truly fragrant and the color darkens, so there's no raw taste left.
- Add the ProteinAdd the shredded chicken and sliced meatballs. Stir until everything is coated in the spice paste.
- Add the RiceAdd the rice and sweet soy sauce. Turn up the heat, stir quickly and evenly until the rice color is uniform and a smoky aroma comes through.
- Add the VegetablesAdd the cabbage and scallion. Stir briefly for about 30 seconds to keep the vegetables crisp, then turn off the heat.
Serving Suggestion
Serve Nasi Goreng Jawa warm, topped with a fried egg, fried shallots, sliced cucumber and fresh tomato, and shrimp crackers on the side.
